Ihr Lieben, heute habe ich mal wieder ein Rezept für euch! Zugegeben, eigentlich ist es gar kein großes Rezept, sondern vielmehr die Vorstellung einer Risotto-Mischung ;-).

Wir sind regelmäßig am Wochenende in Essen Rüttenscheid unterwegs – um etwas zu essen, zu trinken, spazieren zu gehen, oder zum Shoppen. Neu auf der Rüttenscheider Straße (die Straße, um die sich in diesem hübschen Stadtteil Essens alles dreht) ist der Gewürz- und Delikatessenladen Violas’. Es handelt sich hierbei wohl um eine Kette, ich kannte sie aber vorher noch nicht. Jedenfalls gibt es hier eine Riesenauswahl an Gewürzmischungen, Ölen, Marmeladen, Süßkram, Kräutern, Trockenfrüchten usw., die sich auch prima zum Verschenken eignen.

Natürlich kam auch ich nicht drum herum etwas mitzunhemen, und so ist – neben einer hellen Balsamico-Granatapfel-Creme – auch die Mischung für ein Zitronen-Mandel-Risotto in meiner Einkaufstüte gelandet.

Die Zubereitung des Risottos läuft genauso wie mit purem Risottoreis (etwa 200 Gramm für zwei Personen als Hauptgang); einziger Unterschied ist, dass dieser hier schon gewürzt und mit Zitrone, Mandeln und Pinienkernen verfeinert ist.

Der Reis wird zunächst in Olivenöl scharf angeschwitzt. Anschließend löscht ihr ihn mit einem Schuss Weiswein ab, stellt den Herd auf mittlere Hitze und gebt innerhalb der nächsten 20 Minuten nach und nach 500-600 Milliliter heiße (!) Brühe hinzu. Wichtig: Immer wieder umrühren, das Risotto kann sonst leicht anbrennen. Am Ende sollte es eine cremige Konsistenz-, der Reis aber immer noch Biss haben.

Kurz vor dem Servieren kommt dann noch eine Handvoll geriebener Parmesan hinzu.

Today I am sharing a new recipe with you my lovelies! Well, to be honest, it isn’t really a recipe but rather the review of a perpared risotto mixture. ;-)

We are strolling through Rüttenscheid – a district of Essen – about two times every month. New on the Rüttenscheider Street which is the main street of this beautiful district is the delicatessen shop Violas’. It is a retail chain, but I haven’t heard or seen it before. Anyway, they offer a wide range of mixed spices, oil, jam, sweets, herbs dried fruits and so on.

Of course I had to take something with me and I decided upon this lemon almond risotto mix.

The preparation is the same as it is with pure risotto rice (200 grams for two portions). The only difference is that the mix is already spiced and pimped with lemon, almonds and pine nuts.

First, the rice has to be sweatened with olive oil. Then deglaze it with a half glass of white wine. Cook the risotto slowly for the next 20 minutes and add bit by bit 500-600 milliliters of hot (!) stock. You have to stir again and again, so that the risotto doesn’t scorch. At the end the risotto should be creamy but still firm to the bite.

Just before serving you can add a handful of grated Parmesan.

I served the risotto with breaded fish and some broccoli.

    Das sieht richtig lecker aus, ich liebe Risotto! Voilas kannte ich noch nicht, werde da aber auf jeden Fall mal vorbeischauen wenn ich das nächste Mal wieder auf der Rü bin. Danke für den Tipp! :-)
